    Prepare the Squash

    Preheat your oven to 400°F (200°C). Cut the candy roaster squash in half lengthwise and scoop out the seeds. Place the squash halves cut-side up on a baking sheet.

    Season the Squash

    Drizzle the cut sides of the squash with olive oil, and season with salt and black pepper.

    Roast the Squash

    Roast the squash in the preheated oven for about 30-40 minutes, or until the flesh is tender when pierced with a fork.

    Prepare the Filling

    While the squash is roasting, chop the celery into small pieces. In a skillet over medium heat, add a little olive oil and sauté the celery for about 5 minutes until tender.

    Combine Ingredients

    In a bowl, combine the sautéed celery, golden raisins, sliced almonds, and chopped parsley. Mix well.

    Once the squash is roasted, remove it from the oven and fill each half with the celery mixture.
