Prepare the Broth
In a large pot, add the beef bones and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Skim off any foam that forms.

Simmer the Broth
Cover and simmer the broth on low heat for at least 4 hours, adding water as necessary to keep bones submerged.

Season the Broth
After 4 hours, strain the broth and return it to the pot. Add fish sauce, sugar, and salt to taste. Keep it warm.

Cook the Noodles
In another pot, cook rice noodles according to package instructions. Drain and set aside.

In serving bowls, place cooked noodles, then ladle hot broth over the top. Top with fresh herbs and additional toppings as desired.
