Prepare the Filling
Heat olive oil in a large skillet over medium heat. Add the chopped onions and garlic, sauté until translucent. Add the mushrooms, salt, and pepper. Cook until the mushrooms release their moisture and it evaporates. Stir in the chopped spinach and thyme, and cook for another 2-3 minutes. Remove from heat and let cool.

Assemble the Wellington
Preheat the oven to 200°C (400°F). Roll out the puff pastry sheets on a floured surface. Place half of the mushroom mixture in the center of each sheet, then fold the pastry over to encase the filling. Seal the edges by pressing them together with a fork.

Bake
Transfer the wellingtons to a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown.

Allow to cool for a few minutes before slicing. Serve warm with a side salad or your favorite dipping sauce.
