Prepare the Turkey Mixture
In a large bowl, combine the ground turkey, mayonnaise, Dijon mustard, salt, and black pepper. Mix until well combined.

Cook the Turkey
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the turkey mixture and cook for about 6-8 minutes, or until fully cooked, breaking it up with a spatula as it cooks.

Assemble the Melt
On two slices of whole grain bread, evenly distribute the cooked turkey mixture. Top each with two slices of Swiss cheese.

Toast the Sandwich
In the same skillet, add the remaining tablespoon of olive oil. Place the assembled sandwiches in the skillet, cover, and cook for 3-4 minutes on one side until golden brown. Carefully flip and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.

Serve
Remove the sandwiches from the skillet. Slice the tomato and place it on top of the melted cheese along with the lettuce leaves. Serve hot.
