1. Prepare the Potatoes

Peel the potatoes and cut them into thin fries. Soak them in cold water for at least 30 minutes to remove excess starch.

2. Cook the Fries

In a large pot, heat enough oil for frying. Once hot, fry the potatoes in batches until golden brown and crispy. Drain on paper towels and season with salt.

3. Prepare the Steak

Remove the ribeye steaks from the fridge and let them sit at room temperature for about 30 minutes. Season both sides with salt and black pepper.

4. Cook the Steak

In a skillet, heat olive oil over medium-high heat. Add the steaks and sear for about 4-5 minutes per side for medium-rare, adding butter, garlic, and rosemary for flavor. Baste the steaks with the melted butter.

5. Rest the Steak

Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

6. Serve

Slice the steak and serve alongside the fries. Garnish with chopped parsley.
