Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and black pepper. Cook the chicken for 5-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest before slicing.

Make the Sauce
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce thickens slightly.

Add Spinach and Chicken
Add the fresh spinach to the sauce and cook until wilted. Slice the cooked chicken and add it to the skillet, along with the cooked pasta. Toss everything together, and season with salt, black pepper, and grated nutmeg to taste.

Serve the Chicken Florentine Pasta warm, garnished with additional Parmesan cheese if desired.
