Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Remove the fries from the water, pat them dry with paper towels, and fry in batches until golden brown (about 5-7 minutes).

Season the Fries
Once fried, remove the fries from the oil and place them on paper towels to drain. Immediately sprinkle with salt.

Add Toppings
Transfer the fries to a serving platter. Drizzle with truffle oil, and sprinkle with grated Asiago cheese and chopped parsley.
