Preparation of Octopus

Cleaning and Cooking the Octopus
Clean the octopus by rinsing it under cold water. In a large pot, bring water to a boil. Add the octopus and cook for about 30-40 minutes until tender. Drain and let cool.

Glazing the Octopus
Once cooled, cut the octopus into quarters. Brush the tamari glaze over the pieces and set aside.
Preparation of Almond Ajo Blanco

Making the Ajo Blanco
In a blender, combine blanched almonds, garlic, bread, olive oil, white wine vinegar, and water. Blend until smooth. If the mixture is too thick, add more water to achieve desired consistency. Season with salt to taste.
Plating

Serving the Dish
On a plate, pour a generous amount of almond ajo blanco. Arrange the glazed octopus on top and sprinkle with togarashi for an added kick.
