Method
Brownies
- 1
Prepare the Brownie Batter
Preheat your oven to 350°F (175°C). Melt the butter in a saucepan over low heat. Remove from heat and stir in granulated sugar, brown sugar, and vanilla extract. Add the eggs one at a time, mixing well after each addition. In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually add dry ingredients to the wet ingredients until well combined. Stir in chocolate chips.
- 2
Bake the Brownies
Pour the brownie batter into a greased 9x13 inch baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool in the pan before cutting into squares.
Coconut Caramel

Prepare the Coconut Caramel
In a saucepan over medium heat, combine coconut milk and brown sugar. Stir constantly until the mixture thickens and reduces to a caramel-like consistency, about 10-15 minutes. Remove from heat and stir in vanilla extract and a pinch of sea salt.
Candied Pecans

Make Candied Pecans
In a saucepan, combine water and granulated sugar. Bring to a boil and stir until sugar dissolves. Add pecans and cinnamon, stirring to coat. Continue cooking until the mixture thickens and the pecans are coated, about 5-7 minutes. Spread on a baking sheet to cool.

Serve the Brownies
Cut the brownies into squares and plate them. Drizzle the coconut caramel over the brownies, sprinkle with candied pecans, and top with a scoop of vanilla ice cream.
