    Prepare the Tenderloin

    Season the beef tenderloin with salt, black pepper, and fresh thyme. Let it sit at room temperature for about 30 minutes.

    Sear the Tenderloin

    In a skillet, heat olive oil over medium-high heat. Once hot, add the beef tenderloin and sear for about 4-5 minutes on each side for medium-rare, adjusting time based on your preference.

    Rest the Meat

    Remove the tenderloin from the skillet and let it rest on a cutting board, loosely covered with foil, for about 5 minutes.

    Make the Wine Jus

    In the same skillet, add sliced Spanish onions and sauté until caramelized, about 5-7 minutes. Pour in the Canadian prime red wine, scraping the bottom of the pan to deglaze. Let it simmer and reduce by half.

    Finish the Jus

    Stir in butter for richness, and season with salt and pepper to taste.

    Slice the tenderloin, plate it, and drizzle the red wine jus over the top. Enjoy!
