Prepare Burger Patty

Cook Quinoa
In a small pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Set aside to cool.

Mash Black Beans
In a large bowl, mash 1 cup of black beans until mostly smooth, leaving some chunks for texture.

Form Patties
Divide the mixture into two equal portions and shape each portion into a burger patty.

Cook Patties
Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
Assemble Burger

Prepare Buns
Toast the burger buns lightly on the skillet or in a toaster until golden.

Add Toppings
On the bottom half of each burger bun, place a lettuce leaf and a slice of tomato.

Place the cooked veggie patty on top of the tomato.

Top with the other half of the burger bun and serve immediately.
