Method

Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut the unsalted butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

  4. 4

    Roll Out the Dough

On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie plate. Transfer it to the pie plate and trim any excess crust hanging over the edges.

  5. 5

    Pre-bake the Crust

Preheat your oven to 425°F (220°C). Prick the bottom of the crust with a fork and bake for 10 minutes. Remove from the oven and set aside.

Filling Preparation

  1. 6

    Mix the Filling

In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix until smooth.

  2. 7

    Add Eggs and Milk

Add the eggs one at a time, mixing well after each addition. Pour in the evaporated milk and mix until everything is well combined.

  3. 8

    Fill the Crust

Pour the pumpkin filling into the pre-baked pie crust, smoothing the top with a spatula.

  4. 9

    Bake the Pie

Reduce the oven temperature to 350°F (175°C) and bake for 45 to 55 minutes, or until the filling is set and a knife inserted in the center comes out clean.

  5. 10

    Cool and Serve

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. Serve with whipped cream if desired.
