Cooking the Quinoa

    Rinse the Quinoa

    Place the organic red and white quinoa in a fine mesh strainer and rinse under cold running water. This helps remove the natural coating (saponin) that can give quinoa a bitter taste.

    Combine Ingredients

    In a medium saucepan, combine the rinsed quinoa, 4 cups of water, and 1 tsp of salt. Stir to combine.

    Bring to a Boil

    Place the saucepan over medium-high heat and bring the mixture to a boil.

    Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 15 minutes or until the quinoa has absorbed all the water.

    Fluff the Quinoa

    Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes. Then, use a fork to fluff the quinoa gently.

Adding Flavor

    Drizzle 2 tablespoons of olive oil over the fluffed quinoa and gently mix it in.

    Add 2 tablespoons of lemon juice to the quinoa and stir well to combine.

    Sprinkle 1 tablespoon of chopped fresh parsley on top for added flavor and a pop of color.
