    In a mixing bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them evenly with the marinade. Let it sit for at least 15 minutes.

    In a saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    While the chicken and quinoa are preparing, chop the cherry tomatoes in halves, dice the cucumber, finely chop the red onion, and roughly chop the fresh parsley.
