Prepare Quinoa

In a medium saucepan, combine the rinsed quinoa, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium heat.

Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed.

Remove from heat and let it sit covered for 5 minutes. Then fluff with a fork and set aside.

In a large bowl, combine 2 cups of broccoli florets and 1 cup of sliced carrots.
