Dry Ingredients

Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, sift together the all-purpose flour, granulated sugar, baking soda, ground cinnamon, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the vegetable oil, eggs, vanilla extract, mashed ripe bananas, and crushed pineapple until smooth.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. 5

    Add Add-ins

Gently fold in the chopped pecans or walnuts and shredded coconut until evenly distributed.

  6. 6

    Bake the Cake

Divide the batter evenly among the prepared cake pans and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cakes

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting Preparation

  1. 8

    Make the Frosting

In a large mixing bowl, beat together the softened cream cheese and softened unsalted butter until smooth and creamy.

  2. 9

    Add Sugar and Vanilla

Gradually add the powdered sugar and vanilla extract, continuing to beat until the frosting is light and fluffy.

  3. 10

    Frost the Cake

Once the cakes are completely cool, place one layer on a serving plate, spread a layer of cream cheese frosting, add the second layer, and repeat. Frost the top and sides of the cake with the remaining frosting.
