1. Wash and Cut Potatoes

Thoroughly wash the russet potatoes under cold running water to remove any dirt. Peel (if desired) and cut each potato into thin strips, about 1/4 inch wide.

2. Soak Potatoes

Place the cut potato strips into a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve a crispier fry.

Seasoning and Baking

3. Preheat Oven

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

4. Drain and Dry Potatoes

After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

5. Mix Seasoning

In a small bowl, combine the olive oil, dried rosemary, dried thyme, garlic powder, salt, and black pepper. Mix well until all ingredients are combined into a paste.

6. Coat Potatoes

In a large mixing bowl, add the dried potato strips and pour the herb seasoning mixture over them. Toss until the potatoes are evenly coated with the seasoning.

7. Bake the Fries

Spread the coated potato strips in a single layer on the prepared baking sheet. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.
