Method

For the Salmon

  1. 1

    Prepare the Marinade

In a small bowl, whisk together olive oil, lemon juice, minced garlic, fresh dill, salt, and black pepper.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over the top. Cover and refrigerate for at least 30 minutes.

  3. 3

    Grill the Salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 6-8 minutes per side or until the salmon flakes easily with a fork.

For the Grilled Vegetables

  1. 4

    Prepare the Vegetables

In a large bowl, combine the sliced zucchini, bell peppers, and trimmed asparagus. Drizzle with olive oil, salt, and black pepper, and toss to coat evenly.

  2. 5

    Grill the Vegetables

Once the grill is ready, place the vegetables in a grill basket or directly on the grill grates. Grill for about 8-10 minutes, turning occasionally, until they are tender and have grill marks.

For the Quinoa

  1. 6

    Cook the Quinoa

Rinse quinoa under cold water. In a medium saucepan, combine the rinsed quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the quinoa is fluffy and the water is absorbed.
