Salad Preparation

    In a skillet over medium heat, add a little olive oil and season the chicken breasts with salt and pepper. Cook for 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes before chopping into bite-sized pieces.

    While the chicken is cooking, wash and chop the romaine lettuce into bite-sized pieces. Cut the cherry tomatoes in half and slice the cucumber into thin rounds.
