Method

Preparing the Salmon

  1. 1

    Make the Spice Mix

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, black pepper, and sea salt. Mix well to create a spice blend.

  2. 2

    Season the Salmon

Pat the salmon fillets dry with a paper towel. Rub each fillet with olive oil, then generously coat both sides with the spice mix.

  3. 3

    Heat the Pan

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering but not smoking.

  4. 4

    Cook the Salmon

Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes, then gently flip and cook for an additional 3-4 minutes until the salmon is cooked through and has a blackened crust.

Preparing the Sides

  1. 5

    Cook the Quinoa

In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until all the liquid is absorbed. Fluff with a fork.

  2. 6

    Prepare the Asparagus

While the quinoa cooks, rinse the asparagus and trim the ends. In the same skillet used for the salmon, add the remaining 2 tablespoons of olive oil and sauté the asparagus over medium heat for 5-7 minutes until tender but still crisp.

  3. 7

    Serve with Lemon

Slice the lemon into wedges. Serve the blackened salmon fillets with sautéed asparagus and quinoa, garnished with freshly chopped parsley and lemon wedges on the side.
