Salad Preparation

Roasting the Beets
Preheat the oven to 400°F (200°C). Wash the beets thoroughly and wrap each beet in aluminum foil. Place them on a baking sheet and roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork. Allow them to cool, then peel and slice them into wedges.

In a large salad bowl, combine the mixed greens (arugula, spinach, and kale). Rinse the greens under cold water and spin them dry using a salad spinner.

Thinly slice the red onion and halve the cherry tomatoes. Add the sliced onions, halved cherry tomatoes, sliced roasted beets, and walnuts to the bowl with mixed greens.
