Preparation
- 1
Prepare the Beets
Wash the beets thoroughly under running water. Trim the tops and roots, then wrap each beet individually in aluminum foil.
- 2
Roast the Beets
Preheat your oven to 400°F (200°C). Place the wrapped beets on a baking sheet and roast for about 45-60 minutes, or until they can be easily pierced with a fork. Once done, let them cool before peeling and slicing them.
- 3
Prepare the Vegetables
While the beets are roasting, rinse the mixed greens and pat them dry. Halve the cherry tomatoes, and slice the cucumber into thin rounds.
Dressing
- 4
Make the Dressing
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
Assembly
- 5
Combine the Ingredients
In a large salad bowl, add the mixed greens, sliced beets, cherry tomatoes, and cucumber. Drizzle the dressing over the salad and toss gently to combine.
- 6
Add Toppings
Crumble the goat cheese over the top of the salad, sprinkle with walnuts, and garnish with chopped fresh parsley.
