    Begin by dicing the yellow onion, slicing the carrots into rounds, and mincing the garlic. Clean the mushrooms and slice them.

    In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. When the oil is hot, add the beef and sear on all sides until browned, about 4-5 minutes per side. Remove the beef and set it aside.

Cooking the Braise

    In the same pot, add the diced onion, carrots, and minced garlic. Sauté for about 5 minutes until the onion is translucent. Add the sliced mushrooms and continue to sauté for an additional 3-4 minutes until the mushrooms are softened.
