    Prepare the Pie Crust

    In a large bowl, whisk together the all-purpose flour, sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, 1 tablespoon at a time, mixing with a fork until the dough comes together. Divide the dough in half, shape it into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling

    Prepare the Apples

    In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour, and vanilla extract. Toss until the apples are evenly coated.

    Let the Filling Rest

    Allow the apple mixture to sit for about 15 minutes. This will help to draw out some of the juices.

Assemble and Bake

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Roll Out the Dough

    On a floured surface, roll out one disc of dough to fit your pie pan. Place the rolled dough into the pan and fill with the apple mixture.
