Prepare the Steak

    Season the Steak

    Sprinkle the tenderloin ribeye with salt and black pepper on all sides.

    Sear the Steak

    In a skillet, heat 2 tablespoons of olive oil over medium-high heat. When the oil is hot, add the seasoned steak and sear for 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing it thinly.

Prepare the Crostini

    Slice the Baguette

    Cut the baguette into ½ inch thick slices.

    Toast the Baguette

    Brush each slice with olive oil. Arrange on a baking sheet and toast in the oven at 400°F (200°C) for about 5-7 minutes or until golden brown.

Make the Chimichurri

    Combine Ingredients

    In a bowl, mix together the fresh parsley, fresh oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

    Blend the Chimichurri

    Stir well until all ingredients are combined. Allow to sit for at least 10 minutes to let the flavors meld.

Assemble the Crostini

    Spread Chevre

    On each toasted baguette slice, spread a generous amount of creamy chevre.

    Add Steak

    Top with a few slices of the rested steak.

    Drizzle with Chimichurri

    Finish by drizzling chimichurri over the steak before serving.
