Preparation

    Prepare the Ribeye Steak

    Cut the ribeye steak into 1-inch chunks and season them generously with blackening seasoning. Allow the steak to sit for about 15 minutes to absorb the flavors.

    Chop the Vegetables

    While the steak is resting, chop the bell peppers, onion, and portabella mushrooms into bite-sized pieces.

Cooking the Steak Bites

    Sear the Steak

    Heat olive oil in a large skillet over medium-high heat. Add the seasoned ribeye chunks and sear for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped bell peppers, onion, and portabella mushrooms. Sauté for 5-7 minutes until the vegetables are tender and slightly caramelized.

Making the Portabella Blue Cheese Cream Sauce

    Prepare the Sauce

    In a small saucepan, sauté the finely chopped portabella mushrooms and minced garlic over medium heat until the mushrooms are soft, about 5 minutes. Add heavy cream and bring to a simmer.

    Add Cheese and Seasoning

    Stir in the crumbled blue cheese, salt, and black pepper. Continue to simmer for another 3-5 minutes until the sauce thickens slightly. Remove from heat.

Serving

    Assemble the Dish

    On a serving platter, combine the seared steak bites with the sautéed vegetables. Drizzle the portabella blue cheese cream sauce over the top.

    Garnish and Serve

    Garnish with sliced green onions and serve warm with pita bread on the side.
