Prepare the Shrimp
In a large bowl, combine the shrimp, lime juice, salt, and black pepper. Set aside to marinate for about 15 minutes.

Cook the Vegetables
In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, red bell pepper, garlic, and ginger. Sauté until the vegetables are softened, about 5-7 minutes.

Add Spices and Shrimp
Stir in the scotch bonnet pepper, curry powder, and tomato paste. Cook for another 2-3 minutes, then add the marinated shrimp to the skillet. Cook until the shrimp are pink and cooked through, about 5-6 minutes.

Finish and Serve
Remove from heat, stir in the chopped cilantro, and serve hot with rice or crusty bread.
