Preparation of Fish

Clean the Fish
Rinse the Shima Aji fillets under cold running water to remove any excess slime or impurities. Pat dry with paper towels.

Season the Fillets
Sprinkle both sides of the fillets with salt and black pepper evenly. Allow them to sit for about 15 minutes to absorb the seasoning.
Cooking

Cook the Fish
Heat a non-stick frying pan over medium-high heat. Place the seasoned Shima Aji fillets in the pan, skin-side down. Cook for about 3-4 minutes or until the skin is crispy and golden brown.

Flip and Finish Cooking
Carefully flip the fillets using a spatula and cook for an additional 2-3 minutes on the other side until cooked through and opaque.
Serving

Plate the Dish
Transfer the cooked Shima Aji fillets to a serving plate. Squeeze fresh lemon juice over the top.

Sprinkle chopped fresh chives over the fillets and drizzle soy sauce around the plate for added flavor.
