Prepare the Salmon

Using a sharp knife, slice the salmon fillet into thin sashimi-style pieces. Arrange them neatly on a serving plate.

Prepare the Lychee Ginger Sauce

Peel and pit the lychees, then blend them with fresh ginger in a food processor until smooth. Strain through a fine mesh sieve to remove any pulp and achieve a smooth sauce.

Prepare Myoga Relish

Finely slice the myoga and set aside in a small bowl.

Prepare Seasonal Fruit

Peel and dice the seasonal fruit of your choice into small cubes and set aside.

Make the Dressing

In a small bowl, combine sake, soy sauce, lime juice, and honey. Whisk until the honey is fully dissolved and the mixture is well combined.

Plating

Assemble the Dish

Drizzle the lychee ginger sauce over the sliced salmon. Scatter the diced seasonal fruit on top of the salmon, followed by a sprinkle of the myoga relish. Finish with a drizzle of the sake dressing on top.
