Preparation

Prep the Fish

Rinse the opal eye fish under cold water and pat dry with paper towels. Place the fish on a clean cutting board.

Prepare the Marinade

In a small bowl, combine the olive oil, minced garlic, salt, and black pepper. Squeeze the juice of the whole lemon into the mixture and stir until well combined.

Marinate the Fish

Brush the marinade generously over both sides of the fish, ensuring it's well coated. Let the fish sit for at least 15 minutes to absorb the flavors.

Chop the Parsley

While the fish is marinating, finely chop the fresh parsley and set aside for garnish.

Preheat the Grill

Preheat your grill or grill pan over medium-high heat.

Grill the Fish

Once the grill is hot, place the marinated fish on it. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Serve

Remove the fish from the grill and transfer it to a serving platter. Garnish with lemon slices and sprinkle with additional parsley if desired.
