Pat the bigeye tuna steak dry with paper towels. This will help achieve a better sear.

In a bowl, mix the soy sauce, mirin, sesame oil, salt, and black pepper. Place the tuna steak in the bowl and let it marinate for 15-20 minutes, turning once.

Heat a skillet or grill pan over high heat. Once hot, remove the tuna from the marinade, letting excess marinade drip off, and place it in the skillet. Sear for about 1-2 minutes on each side until a golden brown crust forms but the center remains rare.

For an authentic aburi finish, you can use a culinary torch to lightly sear the top of the tuna after cooking. This will give it a smoky flavor and a beautiful presentation.

Let the tuna rest for a minute, then slice it thinly against the grain. Arrange the slices on a plate and garnish with chopped green onions, sesame seeds, a dollop of wasabi, and pickled ginger on the side.
