Preparation of Fish

    Slice the Madai

    Using a sharp knife, slice the Madai into thin sashimi-style pieces, about 1/4 inch thick. Arrange them artfully on a chilled plate.

    Prepare the Asian Pear

    Core the Asian pear and slice it thinly, similar to the fish. Arrange the slices on the plate with the Madai.

    Prepare the Myoga and Red Onion

    Finely slice the myoga bulbs and the red onion. Sprinkle these over the fish and pear on the plate.
