Preparation

    Prepare the Marinade

    In a bowl, combine soy sauce, mirin, sesame oil, lemon juice, salt, and black pepper. Mix well until the salt is dissolved.

    Marinate the Scallops

    Add the fresh scallops to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes in the refrigerator.

Cooking

    Preheat the Grill/Pan

    Preheat a grill or a cast-iron pan over medium-high heat. Make sure it is hot enough to sear the scallops.

    Sear the Scallops

    Remove the scallops from the marinade (discard the marinade). Place the scallops on the grill/pan and sear for about 1-2 minutes on each side, or until they develop a nice golden crust. Do not overcrowd the pan; work in batches if necessary.

    Finishing Touch

    Once seared, remove the scallops and place them on a serving plate.

Garnishing

    Add Garnish

    Sprinkle chopped green onions and toasted sesame seeds over the seared scallops. Drizzle with sriracha or chili oil to taste for an extra kick.
