Prepare the Mackerel
Start by cleaning the Norwegian mackerel. Remove the guts and head, then rinse the fish under cold water. Pat dry with paper towels.

Salt the Fish
Rub the salt all over the mackerel, ensuring that it is evenly coated. Place it in a shallow dish and cover it with plastic wrap. Let it sit in the refrigerator for 2 hours.

Make the Marinade
In a bowl, combine the rice vinegar, sugar, and mirin. Stir until the sugar is dissolved.

Rinse and Dry
After 2 hours, remove the mackerel from the refrigerator. Rinse off the salt under cold water and pat dry with paper towels.

Marinate the Fish
Place the mackerel in a shallow dish and pour the marinade over the fish. Add the sliced ginger on top. Cover and refrigerate for at least 12 hours, preferably 24 hours.

Slice and Serve
Once marinated, remove the mackerel from the marinade and slice it thinly against the grain. Serve with wasabi and soy sauce on the side.
