Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Make a small slit on the back of each shrimp to prevent curling while frying.

Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the ice water, stirring gently until just combined. The batter should be slightly lumpy.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Shrimp
Dip each shrimp into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches to avoid overcrowding. Cook for about 2-3 minutes on each side until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the shrimp from the oil and drain on paper towels. Serve immediately with soy sauce, grated daikon radish, and lemon wedges on the side.
