    Clean the Anchovies

    Rinse the fresh anchovies under cold water and remove the heads and guts. Pat them dry with a paper towel.

    Salt the Anchovies

    Layer the anchovies in a non-metallic dish, sprinkling sea salt between each layer. Cover and refrigerate for at least 24 hours.

    Rinse and Marinate

    After 24 hours, rinse the salted anchovies under cold water to remove excess salt. Place them in a clean dish and cover with white wine vinegar. Let them marinate in the fridge for another 24 hours.

    Prepare the Garnish

    In a small bowl, mix the minced garlic, chopped parsley, and red pepper flakes together.

    Serve

    Remove the anchovies from the vinegar and pat them dry. Arrange them on a serving platter, drizzle with olive oil, and sprinkle the garlic mixture on top. Serve chilled.
