In a large mixing bowl, combine the mascarpone cheese, heavy cream, granulated sugar, and vanilla extract. Using an electric mixer, beat the mixture on medium speed until it becomes smooth and creamy, about 3-5 minutes.

Dip each ladyfinger cookie briefly into the cooled espresso coffee, ensuring they are soaked but not soggy. Arrange a layer of the soaked ladyfingers at the bottom of serving cups.

Layer the Mixture
Spoon a layer of the cream mixture over the ladyfingers in each cup. Repeat the layers until the cups are filled, finishing with a layer of the cream mixture on top.

Cover the cups with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow the flavors to meld.
