Prepare the Chicken
Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.
Dredge the Chicken
Set up a dredging station with one plate of flour and another bowl with beaten eggs and Parmesan cheese. Dredge each chicken breast in flour, shaking off excess, then dip in the egg mixture.
Cook the Chicken
In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
Make the Sauce
In the same skillet, add chicken broth and lemon juice, scraping up any browned bits from the bottom. Bring to a simmer and let reduce for about 5 minutes.
Finish the Dish
Return the chicken to the skillet and cook for an additional 2-3 minutes in the sauce. Stir in the remaining butter and sprinkle with fresh parsley before serving.
