Cooking Instructions
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add the chopped shallots and sauté until translucent, about 3-4 minutes.
- 3
Add Bacon and Chicken
Add the chopped applewood smoked bacon to the skillet and cook until crispy. Stir in the grilled chicken and cook for an additional 2-3 minutes.
- 4
Combine Vodka and Tomatoes
Carefully add the vodka to the skillet, allowing it to simmer for about 2 minutes to reduce slightly. Then, add the crushed tomatoes and stir well.
- 5
Finish the Sauce
Reduce the heat to low, then stir in the heavy cream. Add salt and black pepper to taste. Allow the sauce to simmer for another 5 minutes.
- 6
Combine Pasta and Sauce
Add the cooked rigatoni to the sauce, tossing to coat evenly. Cook for an additional 2-3 minutes to heat through.
- 7
Serve
Remove from heat and stir in the grated Parmesan cheese and chopped basil. Serve hot, garnished with additional Parmesan if desired.
