- 1
Cook the Penne
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Chicken
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the grilled chicken breast (sliced or cubed) and sauté for 3-4 minutes until heated through. Remove from the skillet and set aside.
- 3
Sauté Garlic and Spinach
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the fresh spinach and cook until wilted, about 2-3 minutes.
- 4
Make the Cream Sauce
Reduce the heat to low and stir in the heavy cream. Allow it to simmer for 2-3 minutes. Then, add the grated Parmesan cheese, stirring until melted and smooth. Season with salt and black pepper to taste.
- 5
Combine Everything
Add the cooked penne and grilled chicken to the skillet with the cream sauce. Toss everything together until the pasta and chicken are well coated with the sauce. Cook for an additional 2 minutes to heat through.
