Cook the Penne Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken
Flatten the chicken breasts slightly for even cooking. Season with salt and black pepper.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dredge each chicken breast in flour, dip in egg, and coat with breadcrumbs.

Cook the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the breaded chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let it rest.

Sauté Garlic and Spinach
In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, then add the fresh spinach and cook until wilted.

Make the Cream Sauce
Lower the heat and add the heavy cream to the skillet, stirring to combine with the garlic and spinach. Let it simmer for a few minutes until slightly thickened. Season with salt and pepper to taste.

Combine and Serve
Add the cooked penne to the cream sauce, tossing to coat evenly. Slice the breaded chicken and place on top of the pasta. Serve warm.
