    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In a large pot or deep fryer, heat the olive oil to 350°F (175°C). Carefully add the fries in batches and fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, mince the garlic and toss it with the fries. Add salt and black pepper to taste, then sprinkle with grated Parmesan cheese and chopped parsley. Toss to combine.
