Preparation Instructions
- 1
Prepare the Fire-Roasted Red Peppers
If using fresh red peppers, roast them over an open flame or in a broiler until the skins are charred. Place them in a bowl and cover with plastic wrap for 10 minutes. Once cooled, peel off the skins, remove the seeds, and slice them into strips.
- 2
Combine the Salad Ingredients
In a large salad bowl, combine the mixed greens, fire-roasted red peppers, cherry tomatoes, cucumber, red onion, and feta cheese.
- 3
Make the Vinaigrette
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper until well combined.
- 4
Dress the Salad
Drizzle the vinaigrette over the salad and toss gently to coat all ingredients. Top with fresh basil before serving.
