Cooking Instructions
- 1
Prepare the Chicken
Begin by flattening the chicken breasts to an even thickness using a meat mallet. Season both sides with salt, black pepper, and Italian seasoning.
- 2
Bread the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip into beaten eggs, then coat thoroughly with breadcrumbs.
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add breaded chicken and cook for about 4-5 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
- 4
Assemble the Dish
Preheat the oven to 375°F (190°C). Slice the ciabatta bread in half and place the bottom halves on a baking sheet. On each half, place a piece of fried chicken, a generous amount of marinara sauce, and top with mozzarella cheese.
- 5
Toast the Sandwiches
Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly. Remove from the oven, and add the top halves of the ciabatta bread.
- 6
Serve
Slice the sandwiches in half and serve immediately while hot.
