    Prepare the Eggplant

    Slice the eggplants into 1/2 inch thick rounds and sprinkle with salt. Let them sit for about 30 minutes to draw out excess moisture.

    Prepare the Breading Station

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Eggplant

    Rinse the salt off the eggplant slices and pat them dry. Dredge each slice in flour, dip in the egg, then coat with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices for about 3-4 minutes on each side until golden brown. Drain on paper towels.

    Layer the Ingredients

    In a baking dish, spread a layer of marinara sauce, followed by a layer of fried eggplant, and top with mozzarella cheese. Repeat the layers until all ingredients are used, finishing with mozzarella on top.

    Preheat the oven to 375°F (190°C). Bake the assembled tray for about 25-30 minutes or until the cheese is bubbly and golden.
