Preparation Steps
1. Prepare the Chicken
Season the chicken cutlet with salt and black pepper. Heat olive oil in a skillet over medium heat and cook the chicken cutlet until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet and let it rest.
2. Toast the Bread
Slice the ciabatta bread and toast it lightly in the skillet or toaster until golden and crispy.
3. Assemble the Panino
Spread the typical sauce on one slice of ciabatta. Layer the cooked chicken cutlet, fresh spinach, and mozzarella cheese on top. Place the other slice of ciabatta on top to form a sandwich.
4. Toast the Panino
Return the assembled panino to the skillet and press down slightly. Cook for about 3-4 minutes on each side, until the cheese is melted and the bread is crispy.
5. Serve
Remove from skillet, slice in half, and serve warm.
