    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, black pepper, and dried oregano. Place them in a large baking tray.

    In a skillet, heat olive oil over medium heat. Add sliced sweet onions and minced garlic, and sauté until the onions are translucent, about 5 minutes. Add sliced mushrooms and cook for another 3-4 minutes.

    Stir in the roasted red peppers and crushed plum tomatoes into the skillet. Simmer for about 10 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper.

    Pour the vegetable mixture evenly over the chicken in the baking tray. Top with shredded provolone cheese. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
