Cooking Instructions
- 1
Prepare the Chicken
Preheat the oven to 375°F (190°C). Begin by seasoning the chicken breasts with salt and pepper. Dredge each chicken breast in flour, shaking off the excess, then dip into beaten eggs, and finally coat with breadcrumbs.
- 2
Cook the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
- 3
Assemble the Dish
In a baking dish, spread half of the marinara sauce on the bottom. Place the cooked chicken cutlets on top, then cover with the remaining marinara sauce and sprinkle mozzarella cheese evenly over the top.
- 4
Bake
Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
- 5
Cook the Pasta
While the chicken is baking, cook the penne pasta according to package instructions. Drain and set aside.
- 6
Serve
Serve the Chicken Parmigiana over a bed of penne pasta, garnished with fresh basil if desired.
