Cooking Instructions

  1. 1

    Cook the Penne Pasta

In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Chicken

Season the chicken breasts with salt and pepper. In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the chicken and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove chicken from the skillet and set aside.

  3. 3

    Cook the Pancetta and Mushrooms

In the same skillet, add the pancetta and cook until crispy, about 3-4 minutes. Add the sliced mushrooms and minced garlic, cooking until the mushrooms are tender, about 5 minutes.

  4. 4

    Add Marsala Wine

Pour in the Marsala wine, scraping up any browned bits on the bottom of the skillet. Let it simmer for about 5 minutes, allowing it to reduce slightly.

  5. 5

    Combine Ingredients

Return the cooked chicken to the skillet and let it simmer in the sauce for another 2-3 minutes. Add the cooked penne pasta and toss everything together to coat the pasta with the sauce. Adjust seasoning with salt and pepper.

  6. 6

    Serve

Garnish with fresh parsley before serving. Enjoy your Chicken Marsala over penne pasta!
