Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add olive oil and salt.

Mix Ingredients
Gradually add flour, mixing until a dough forms. Knead on a floured surface for about 10 minutes until smooth.

First Rise
Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your brick oven to around 475°F (245°C).

Shape the Pizza
Once the dough has risen, punch it down and divide it into 2 equal portions. Roll out each portion on a floured surface to your desired thickness.

Add Toppings
Spread tomato sauce over the base, add mozzarella cheese, and top with your choice of pepperoni, bell peppers, olives, and basil.

Bake the Pizza
Transfer the pizza to the preheated brick oven and bake for 10-12 minutes or until the crust is golden and cheese is bubbly.

Remove the pizza from the oven, slice it, and serve hot.
